Easy Strawberry Jam

A couple weeks ago Nick and I fixed a large breakfast and decided we wanted jam to go with our biscuits, but alas I had taken it to work and didn't have any. No need to fret though because I had some strawberry and I knew I could whip up some strawberry jam in a matter of no time. So, here is the recipe for my quick and easy strawberry jam!



Ingredients:

2 Cups of Strawberries
1 Tablespoon of Lemon Juice
1/4 Cup of Sugar

Directions:

1. Hull and slice two cups of strawberries
2. Blend until desired consistency has been reached
3. Boil strawberries, 1/4 cup of sugar and 1 tbsp of lemon juice at a rapid boil until thickened. Stirring as not to stick.
4. Let cool at room temperature (but in my case I needed it ASAP so I stuck it in the freezer for 10 minutes)

Enjoy!

Yields 4 servings

Fast Food Under 500 Calories

We all tend to eat fast food, whether you eat fast food because it is quick, you like the taste or you're simply hungry and that's your only option there are some better choices you can make in the drive-thru.

Here is a list I have compiled based on Dr. Oz's list which you can find here. Remember that just because you have to eat fast food you don't have to resort to double or even triple the amount of calories you'd typically eat otherwise.

St. Patrick's Day Rice Krispies

I've seen a lot of St. Patrick's Day recipes and here is one of my favorites. It is green Rice Krispies with green and gold sprinkles.




Luck O' The Irish Treats

1 bag of miniature marshmallows
6 cups of Rice Krispies
4 tablespoons of butter
Green food coloring
Green and gold sprinkles
9x13 baking dish

1. Melt butter in a medium saucepan over medium heat
2. Add marshmallows and stir constantly until melted
3. Add food coloring until desired color is achieved
4. Add 6 cups of Rice Krispies
5. Stir together until melded
6. Transfer the Rice Krispie mixture from saucepan to baking dish and let cool
7. Top with green and gold sprinkles
8. Slice and enjoy!

This recipe should yield right at 12 treats weighing in at 169 calories each!
